Fleur De Sel De Guerande

This salt is known as "the caviar of salts" and is accepted by many chefs as teh best of all sea salts. The crystals form on the very top layer of the salt ponds and are harvested by barely skimming hte surface. Fleur de Sel is most often used as a finishing salt, sprinkled on a dish just before it is served.
